Did you perhaps strike an extremely powerful blow to finish her off, resulting in her animation of "dying" (falling asleep) but not the update of the health bar?

Nooope....
Notice combat is long over, and she is fully collapsed on the floor. In your case, the health bar would have been long depleted by now.
